Hi, I know how to create 3D text in illustrator, but I don't know how to achieve this transparency and combination of colour, could anyone help?

Make your 3D text, expand it then ungroup it (as many times as you have to), you may also havbe to release a few clipping masks then apply the colour to each piece and add a layer style, probably multiply / overlay. done.
