I was at a marketing conference this morning - is it true that links to a website listed in a blog always count as backlinks? I'm not an expert on this subject (as you can tell!) so be gentle.

Yes as far as I know.
I don't uinderstand the significance of the website in question being listed in a blog, but all links to a web page are called backlinks. "Back" here only means "to" or "in" (so "backlinks" is the opposite of "outbound" links), it doesn't have to be reciprocal.

Depends on the link type.
dofollow - yes
nofollow - no
Wordpress blogs are setup with nofollow.
It is still a link but it will not pass page rank or link juice.
