Illustration style question

Some are hand drawn (probably pen and ink, maybe a tablet) and others are photographs.

The fish look like sourced vintage pen and ink line illustrations to me, which is why they're all slightly different styles. Very much doubt he
did them himself, going by the sketches on the grey image. It's quite difficult to replicate the style exactly, but you may get close with a Ps filter
or two over a photo.

There is a cheat to get that etching look from a photograph by using a Photoshop plug-in called Engraver 3.

I've used it and it's pretty good.

You can do it yourself without the plug-in in Ps and there are a few tut's out there to show you how.
 
Actually when terms come with the design then designer always prefer illustrator, because of here designer can do lots of varieties. Sometimes designer draw picture then they take it into the tool then we can see these forms.
