I know there are brushes.
I know it can be hand drawn.
I know it can be achieved in PS.

But how the heckaroni is this dude doing it:

Well, I know he is using a shape with a gradient, and then rasterizing in greyscale.

I've tried the grain texture 50 different ways. Tried image tracing and expanding 50 different ways. Tried different percentages of black.

No luck.

Any ideas

Yes, just went through some of the images on Instagram - and there's a video clearly showing how it's done.
It's done quite quickly so you have to pause and unpause quickly.
But you should be able to get an app that can download the video from Instagram and slow it down and play it at your own pace.
