How to replicate an illustration?

HI there. I am replicating a logo for a friend of mine, its his own logo but he doesn't have the original files anymore and the actual business name associated with it is changing so I need a clean version of the logo.

I am an amateur graphic designer and have tried all sorts of ways to replicate it but I cant get it clean enough. Can you help with any tips please? I want to end up with an .ai file that I can use for printing high res signage for his business as well as the usual online presence.

Just trace over the image you have with the pen tool. If you're not familiar with the pen tool it will seem strange at first but you should soon get the
hang of it. There will be plenty of tutorials online.
