The sooner Google evolves to a point where the services that these idiots offer become completely redundant, the better.
Yep - I'd get signed up with SEOmoz straight away. Their analysis tools (even the free set) are invaluable for seeing how your website is doing and seeing what competitors websites are doing that you're not.
SEOmoz's ranking factors is a good place to start. It's a consensus of the opinions of a loads of top SEO people as to what the most important on-page and off-page SEO ranking factors are.

The All in One SEO pack is great, but I've started using the WP SEO plugin by Yoast.
It has a lot more features and even helps analyse the content of a of a page and makes suggestions to improve SEO.
Sitemap generation is built-in too.
