If you go to the blog that hosts the first image (spoongraphics) that you pasted in your message, you'll see a tutorial that explains exactly how to make that image....!

Depends what you're using it for but it may be worth your while to just download a vector file and edit it to suit?

I also find downloading vector files helps me to understand how the effect has been created.

I've tried looking for fully customisable ones but when i've downloaded some they haven't been editable at all
Any help?

Some creators may group a file or make a compound from it.

Try right clicking and selecting "release compound path" or "ungroup"

Goes without saying that you must make sure you are downloading an eps file or a .ai file as these are vectors.
