Do you have to provide written\verbal evidence showing the process you took in the development of the logo and why you decided to design the logo in this particular way?

if you do, show that you have done some research, Google search etc, also you've asked the design community for feedback on a design and adjusted your designs based on constructive feedback

Yeah this is better. Could you make the ellipse at the back look a little more like a coffee bean?
